1 | box | Betty Crocker Suddenly Salad Classic Pasta Salad Mix | |

3 | Tablespoons | cold water | |
|
|||
2 | Tablespoons | olive oil or vegetable oil | |
|
|||
1 | Tablespoon | lemon juice | |
|
|||
2 | cups | baby spinach leaves | |
|
|||
1 | tomato, sliced into wedges | ||
|
|||
1/2 | cup | baby carrots, sliced in half | |
|
|||
Grated parmesan cheese | |||
|
Fill a 3- quart saucepan about 2/3 full of water and bring to a boil. Add pasta mix (from Suddenly Salad pkg) and gently boil uncovered for 12 minutes, stirring occasionally. Set aside seasoning packet.
Drain pasta; rinse with cold water and shake to drain well.
In a medium bowl, stir together contents of seasoning packet, water, oil and lemon juice.
In a glass serving bowl, assemble the salad in layers as follows:
-pasta
-spinach
-tomatoes
-carrots
-salad dressing
Cover and refrigerate until salad is served.
Top with parmesan cheese just before serving.

For a main dish salad:
Add 1 1/2 cups cut up cooked chicken or ham on top of the spinach and continue with the remaining layers.
